The Dog: The North Shore Beef 3 Way
New England can lay claim to an iconic bun – a top sliced bun with the sides cut off. A versatile and distinct looking bun all around that stands up well to various fillings. Beyond that, there isn’t really a defining hot dog and toppings combination for New England. So today we will take inspiration from the legendary North Shore Beef Sandwich. A “3 Way” North Shore Beef sandwich is composed of shaved beef, an onion bun, American cheese, mayonnaise and James River BBQ sauce. I could not source that particular BBQ sauce, but it seems that Arby’s sauce is close-ish. The onion bun posed another problem, which we worked around by using fried onions as a topping. The onion comes through and gives us some good crunch on top. We used an All-Beef hot dog to homage the beef and the Pork/Beef blend.
Ingredients
2 New England style buns
1 each Wardynski’s All-Natural All-Beef Hot Dog and All-Natural Pork-Beef Hot Dog
1 tbsp Mayonnaise
2 tbsp Fried Onions
2 slices White American Cheese, halved lengthwise
2 oz. Tangy BBQ Sauce (Arby’s)

- Score hot dog – shallow incisions diagonal to the length of the hot dog.

- Set your air fryer to 400* and preheat. Coat basket with pan spray or use a parchment paper liner. Cook for 6-8 minutes, turning halfway through cooking.
- While the hot dog cooks, lightly butter the cut sides of the bun. Set a pan over medium high heat or griddle on high. Place the bun buttered side down and press gently. Cook for around 2 minutes. Check regularly until golden brown. Repeat on the other side.

- Assembly: Place the two pieces of American cheese along the bottom of the bun. Place hot dog on top of the cheese, the warmth will start to melt the cheese. Smear mayonnaise along the top of the hot dog. Drizzle BBQ sauce over top, being generous. Sprinkle on crushed fried onions on last.
